With wine, the variety of grape is key. The taste depends on:
- The region the grapes are grown
- The harvesting method
- The weather/climate
The same factors hold true with premium chocolate. Chocolate is derived from cocoa beans of the cocoa trees.
Three varieties of cacao trees produce these beans: the Criollo, the Trinitario, and the Forastero.
Since I only want what I believe are the best ingredients and flavor to be used for my Cacao Nibs, I decided to choose cocoa beans from the rarest of all these trees – the Criollo tree.
Why the Criollo Tree?
Often referred to as the “King of Cacao,” the Criollo tree is exceptionally rare and resides in the South American rainforest. The cocoa beans produced from these trees represent only 1% of world chocolate production and are considered a highly prized treat. More importantly, these beans produce a taste with a very sweet and delicate essence, and a complex array of flavors.
In other words, they taste GREAT!
What Exactly Are Cacao Nibs?
Cacao nibs enjoy a rich history as a snack food, first consumed between 1400 and 1500 BC. Several hundred years ago, cacao beans were actually used as a form of currency. Every seed was considered valuable, and each was weighed to extract its true value.
Raw cacao beans are actually seeds from the cacao pod that grow on cacao trees. They are protected by a paper-thin shell, which is carefully removed before eating. When this happens, the bean is often split into smaller pieces, called “nibs.” The finished product is a crunchy snack packed with powerful nutrients, antioxidants, and a lot of flavor.
